Food that cannot be consumed by people will be given to animals or composted, she said.<\/p>\n<p>\u201cOur goal, certainly, is to waste nothing,\u201d she said.<\/p>\n<p>The hub is backed by the Montezuma Food Coalition, a group comprised of <a href=\"https:\/\/www.facebook.com\/Mancos-FoodShare-1032159926891842\/\" target=\"_blank\" rel=\"noopener\">The Mancos FoodShare<\/a>, <a href=\"http:\/\/goodsamaritancortez.org\/\" target=\"_blank\" rel=\"noopener\">The Good Samaritan Center<\/a>, <a href=\"http:\/\/www.montezumaschooltofarm.org\/\" target=\"_blank\" rel=\"noopener\">Montezuma School to Farm Project<\/a> and the <a href=\"https:\/\/www.southwestfarmfresh.com\/\" target=\"_blank\" rel=\"noopener\">Southwest Farm Fresh Cooperative<\/a>. The coalition is working with other partners in Montezuma County, such as The Pi\u00f1on Project.<\/p>\n<p>\u201cWe hope to, over time, bring in more nonprofits as we are able to increase our capacity,\u201d Hall said.<\/p>\n<p>The renovations required to open the hub will require $250,000, and the coalition is submitting grants this week and next week to help fund the project, Hall said.<\/p>\n<p>The Montezuma Food Coalition is also working with the <a href=\"http:\/\/www.unitedway-swco.org\/\" target=\"_blank\" rel=\"noopener\">United Way of Southwest Colorado<\/a>, which may fund some renovations, Executive Director and CEO Lynn Urban said. United Way is interested in the hub\u2019s ability to ensure fresh food is delivered to children in need, she said.<\/p>\n<p>\u201cThis plan was very ambitious and was just born in the late spring,\u201d Urban said.<\/p>\n<p>In La Plata County, about 12 percent of the population lacks access to adequate food, and in Montezuma County, about 15 percent of residents face the same problem. That\u2019s one reason why the La Plata County collective is interested in working with the new hub, Landis said.<\/p>\n<p>\u201cOne of our goals is to more equitably distribute the food resources we have,\u201d she said.<\/p>\n<div class=\"naviga-element naviga-subheadline1\">A boost for business<\/div>\n<p><a href=\"\">Southwest Farm Fresh<\/a> is already using a walk-in refrigerator in the new building and expects to start holding its weekly food pickups inside the building this fall, said Kendra Brewer, the co-op\u2019s general manager. The cooler is in a new building that will house the co-op, a food pantry and new food hub.<\/span><span class=\"credit\">Jerry McBride\/Durango Herald<\/span><\/figcaption><\/figure>\n<\/p><p>\u201cWe have been anxiously waiting for our section of this building to be done,\u201d she said.<\/p>\n<p>The co-op is owned by 15 farms, and it markets and distributes food to restaurants in Montezuma County, Durango and Telluride. It also trucks donated food from the Good Food Collective in Durango to the nonprofits in Mancos and Cortez.<\/p>\n<div class=\"naviga-element naviga-subheadline1\">Processing center<\/div>\n<p>The Good Food Collective plans to use the new building to distribute and process food once the building is finished, Landis said. A processing center has been a regional need because \u201cugly\u201d produce, which is edible but can\u2019t be sold at local farmers markets, could be made into products, such as apple sauce. The new products could provide additional revenue for farmers, she said.<\/p>\n<p>Processed products could be brought back to La Plata County to be sold to financially support the collective or distributed to nonprofits, Landis said. Other nonprofits also will be welcome to use the food hub\u2019s kitchen to process food, Brewer said.<\/p>\n<div class=\"naviga-element naviga-subheadline1\">Food education<\/div>\n<p>Michele Martz, a farmer and founding member of Southwest Farm Fresh, is excited about the cooking classes and seminars the food hub will eventually offer, she said.
