The fruit is topped with pale green, buttery slices of avocado, then drizzled with a simple, shallot-spiked lemon and olive oil dressing, and finished with a fresh, fragrant sprinkle of cilantro.<\/p>\n<p>It\u2019s a salad that brings a welcome contrast to the deep flavors of whatever you might be roasting or simmering during the winter months, and, if you pause for a moment before you dig into it, you might just feel the warmth of the sun coming through.<\/p>\n<p><em class=\"mwc_shirttail\">Krieger is a registered dietitian, nutritionist and author who hosts public television\u2019s \u201cEllie\u2019s Real Good Food.\u201d She blogs and offers a weekly newsletter at www.elliekrieger.com.<\/em><\/p>\n<p><em class=\"mwc_recipe_head\">Citrus Salad with Avocado<\/em><\/p>\n<p><em class=\"mwc_recipe_intro_bold\">Servings:<\/em> 4<\/p>\n<p><em class=\"mwc_recipe_subhead\">INGREDIENTS:<\/em><em class=\"mwc_recipe_ingredients\">2 tablespoons extra-virgin olive oil<\/em><em class=\"mwc_recipe_ingredients\">1 tablespoon fresh lemon juice<\/em><em class=\"mwc_recipe_ingredients\">1\u00bd teaspoons finely chopped shallot<\/em><em class=\"mwc_recipe_ingredients\">1 teaspoon honey (may substitute agave nectar)<\/em><em class=\"mwc_recipe_ingredients\">\u00bc teaspoon salt<\/em><em class=\"mwc_recipe_ingredients\">\u00bc teaspoon freshly ground black pepper<\/em><em class=\"mwc_recipe_ingredients\">3 medium oranges, preferably a mix of varieties such as cara cara, blood and navel<\/em><em class=\"mwc_recipe_ingredients\">Flesh of 1 ripe avocado, thinly sliced<\/em><em class=\"mwc_recipe_ingredients\">\u00bc cup fresh cilantro leaves, for garnish<\/em><em class=\"mwc_recipe_subhead\">Method:<\/em>Whisk together the oil, lemon juice, shallot, honey, salt and pepper in a liquid measuring cup to form an emulsified dressing.<\/p>\n<p>Slice off the top and bottom of an orange, standing it on one cut end. Make a series of downward cuts as you work around the fruit, to remove the peel and all white pith. Repeat with the remaining oranges, then slice them crosswise into thin rounds. Discard any pits.<\/p>\n<p>Arrange the orange slices on individual plates. Fan out or arrange the avocado on top.
