{"id":48092,"date":"2021-03-10T00:39:14","date_gmt":"2021-03-10T00:39:14","guid":{"rendered":"https:\/\/dh.durangoherald.com\/tj\/newly-remodeled-columbine-bar-grill-set-to-open-next-month\/"},"modified":"2026-03-31T09:41:22","modified_gmt":"2026-03-31T09:41:22","slug":"newly-remodeled-columbine-bar-grill-set-to-open-next-month","status":"publish","type":"post","link":"https:\/\/dh.durangoherald.com\/tj\/newly-remodeled-columbine-bar-grill-set-to-open-next-month\/","title":{"rendered":"Newly remodeled Columbine Bar &amp; Grill set to open next month"},"content":{"rendered":"\n<p><figure class=\"wp-block-image naviga-inline-image\"><img decoding=\"async\" src=\"https:\/\/imengine.public.prod.dur.navigacloud.com\/?uuid=12549386-2df1-4a05-89a0-dbe747901a45&amp;function=cover&amp;type=preview&amp;source=false&amp;width=2000\" width=\"2000\" height=\"1500\" alt=\"The Columbine Bar &amp; Grill plans to open in April.\" class=\"naviga-image\" loading=\"lazy\"><figcaption><span class=\"caption\">The Columbine Bar &amp; Grill plans to open in April.<\/span><span class=\"credit\">Courtesy of Brent McWhirter<\/span><\/figcaption><\/figure>\n<\/p><p>Opening next month under new ownership, the building that was previously home to the Columbine Bar in Mancos will soon be the site of a family-friendly restaurant offering sandwiches, burgers and steaks.<\/p>\n<p>The new eatery, called the Columbine Bar &amp; Grill, will also offer Colorado craft beers, ciders, wines and spirits.<\/p>\n<p>\u201cIt\u2019s going to be a restaurant that happens to have a bar in it,\u201d co-owner Brent McWhirter told <em>The Journal<\/em>. \u201cThink of Applebee\u2019s, but with actually really good food.\u201d<\/p>\n<p>McWhirter and his wife, Rachel, became owners of the former Columbine Bar in January.<\/p>\n<p>The Columbine Bar had been one of the longest continually operating bars in the state. Some say it opened in 1903, though it was undoubtedly open by at least 1910.<\/p>\n<p>It also had a reputation for being the site of raucous barroom antics.<\/p>\n<p>\u201cIt was known as a pretty rough bar in its heyday,\u201d McWhirter said.<\/p>\n<p>Fights were not uncommon over the years, and there stories of patron riding a horse into the bar.<\/p>\n<p>The owners of the building approached the McWhirters last year about starting a restaurant there and helping in the remodeling decision-making process.<\/p>\n<p>The restaurant was officially purchased in January, but the process of remodeling and upgrading the building began earlier. New plumbing and electric have been slowly installed, along with a new roof.<\/p>\n<p>Along with standard bar fare, the restaurant\u2019s menu will include items like burgers, steaks and pastas. The McWhirters also operate the Moose &amp; More ice cream shop in Cortez. All the restaurant\u2019s desert items will be prepared by Moose &amp; More and transported to Mancos.<\/p>\n<p>Wines and spirits from throughout Colorado will be available. The restaurant also plans on offering items from local cideries, as well as breweries from Cortez and Durango.<\/p>\n<p>The building\u2019s owners also own the Mancos Common Press. McWhirter told <em>The Journal <\/em>that the new restaurant might collaborate with the Mancos Common Press on hosting talks and other events.<\/p>\n<p>McWhirter admits that it was a bit tougher to find contractors and materials during the pandemic.<\/p>\n<p>\u201cIt\u2019s been slow going,\u201d McWhirter said. \u201cVery slow going. We didn\u2019t want to open up right in the midst of the pandemic. We\u2019re kind of blessed to open on the downslope of this where people are getting vaccinated now, so that we can offer in-person dining right from the beginning.\u201d<\/p>\n<p>The goal is to be open at 100 percent capacity by summertime.<\/p>\n<p>\u201cIt\u2019s been good to fill a niche over here that\u2019s sorely needed,\u201d McWhirter said. \u201cPeople really want to go out again. They\u2019re really tired of cooking at home.\u201d<\/p>\n<p>The Columbine Bar &amp; Grill plans to launch in April.
