{"id":27257,"date":"2023-04-03T20:36:38","date_gmt":"2023-04-04T02:36:38","guid":{"rendered":"https:\/\/dh.durangoherald.com\/tj\/indian-taqueria-and-electronic-dance-music-bar-coming-to-durangos-main-avenue\/"},"modified":"2026-03-30T23:55:08","modified_gmt":"2026-03-31T05:55:08","slug":"indian-taqueria-and-electronic-dance-music-bar-coming-to-durangos-main-avenue","status":"publish","type":"post","link":"https:\/\/dh.durangoherald.com\/tj\/indian-taqueria-and-electronic-dance-music-bar-coming-to-durangos-main-avenue\/","title":{"rendered":"Indian taqueria and electronic dance music bar coming to Durango\u2019s Main Avenue"},"content":{"rendered":"\n<p><figure class=\"wp-block-image naviga-inline-image\"><img decoding=\"async\" src=\"https:\/\/imengine.public.prod.dur.navigacloud.com\/?uuid=844d3fed-c747-4fd2-87ca-9acb05f9d6a2&amp;function=cover&amp;type=preview&amp;source=false&amp;width=2000\" width=\"1300\" height=\"867\" alt=\"Francisco&amp;#x2019;s Restaurante Y Cantina on Main Avenue in downtown Durango has reopened as a smaller version of the former popular New Mexican food restaurant.\" class=\"naviga-image\" loading=\"lazy\"><figcaption><span class=\"caption\">Francisco&amp;#x2019;s Restaurante Y Cantina on Main Avenue in downtown Durango has reopened as a smaller version of the former popular New Mexican food restaurant.<\/span><span class=\"credit\">Jerry McBride\/Durango Herald<\/span><\/figcaption><\/figure>\n<\/p><p>A new Indian-Mexican fusion restaurant plans to move into the 600 block of Main Avenue in downtown Durango.<\/p>\n<p>An application for a business license has been filed under the name \u201cCDXX LLC, DBA Roxy\u2019s\u201d or \u201cRoxy\u2019s Tacos\u201d for that location, according to Durango Deputy City Clerk Ben Florine.<\/p>\n<p>The restaurant\u2019s owners, Fletcher Starkey and Roshani Patel, describe it as an \u201cIndian Taqueria and electronic dance music (EDM) bar\u201d combining their passions into one business.<\/p>\n<p>They expect the restaurant to be open by early June with the potential for soft openings in May while the building undergoes renovations and the owners await a liquor license.<\/p>\n<p>The restaurant will offer tacos, grilled burritos, nachos, and rice bowls loaded with a choice of handcrafted curries and chutneys, topped with citrus-herb kale slaw.<\/p>\n<p>\u201cOur flagship items for this new location are going to be tacos but instead of a tortilla, we\u2019ll use naan bread,\u201d Starkey said.<\/p>\n<p>Starkey compares the style of naan bread to that of Navajo fry bread that can be garnished with toppings of a customer\u2019s choice.<\/p>\n<p>The owners will also have more traditional Mexican food options like ground beef for those who may not be interested in dabbling in the exotic combination.<\/p>\n<p>Starkey and Patel used to operate a Roxy\u2019s that opened in 2017 in Boulder. It had a successful run until 2021 when they were forced to leave their University Hill Plaza location because it was going to be demolished to make way for a new hotel.<\/p>\n<p>\u201cAt that point in time, we started looking for a new home,\u201d Starkey said. \u201cWe thought about downtown Longmont and we actually were offered a spot in the new hotel but the price was just astronomical.\u201d<\/p>\n<p>After searching around the state, the two decided on Durango after seeing the city\u2019s scenery.<\/p>\n<p>Roxy\u2019s isn\u2019t just a new fusion restaurant: It could also add to Durango\u2019s nightlife scene. Starkey said once they receive a liquor license they plan to host EDM events on the weekend featuring local artists.<\/p>\n<p>Starkey is a DJ himself and will likely provide the entertainment while they scout out local talent for events. He said its likely that on weekends the establishment will be open until the early hours of the morning.<\/p>\n<p>The location was previously occupied by Francisco\u2019s Restaurante Y Cantina before being divided into three store fronts. The site at 639 Main Ave. was occupied for a while by Cerda 7 Cantina Y Comida before Francisco\u2019s reopened in that smaller location in 2018.
