(Cameryn Cass\/The Journal)<\/span><\/figcaption><\/figure>\n<\/p>\n<p>As of Nov. 27, there\u2019s a new breakfast and lunch restaurant in Mancos.<\/p>\n<p>\u201cWe opened the Wednesday before Thanksgiving, which probably wasn\u2019t the greatest idea,\u201d laughed Rubi Rubio, who owns the restaurant with her partner, Sam Chase.<\/p>\n<p>Their restaurant, Roosters, is at 41900 U.S. Highway 160, next to the Conoco gas station where Ted\u2019s Tacos used to be.<\/p>\n<p>\u201cPeople think we\u2019re a chicken place, and I\u2019m like, no, we\u2019re far from a chicken place,\u201d said Rubio. \u201cThe name was more of it being catchy, and that\u2019s what stuck.\u201d<\/p>\n<p>Initially, they intended Roosters to be more of a breakfast joint, so that\u2019s where the name came from.<\/p>\n<p>\u201cWe kind of thought, you know, morning, a rooster wakes you up,\u201d said Rubio. \u201cI love chicken, I think it was me that came up with it.\u201d<\/p>\n<p>With time, they\u2019d like to expand the menu \u2013 and maybe even lean into its name and explore more chicken options \u2013 but for now, they\u2019re getting settled into the area and their new role as restaurateurs.<\/p>\n<p><figure class=\"wp-block-image naviga-inline-image\"><img decoding=\"async\" src=\"https:\/\/imengine.public.prod.dur.navigacloud.com\/?uuid=13abf99f-a309-5d00-884c-e24fd82495b3&amp;function=cover&amp;type=preview&amp;source=false&amp;width=2000\" width=\"2000\" height=\"1500\" alt=\"The exterior of Roosters, the newest addition to Mancos. (Cameryn Cass\/The Journal)<\/span><\/figcaption><\/figure>\n<\/p><p>\u201cI\u2019ve always wanted a restaurant, and we seized this opportunity. It\u2019s such a small town, so there\u2019s not really a lot of places to rent out. So when the opportunity came on by, we had to take it,\u201d Rubio said.<\/p>\n<p>And they really jumped on it \u2013 they were \u201cin talks\u201d of renting out the space in October, signed the lease in November and opened a few weeks later.<\/p>\n<p>\u201cIt was pretty fast,\u201d said Sam Chase, Rubio\u2019s partner and the other owner.<\/p>\n<p>Aside from finances \u2013 which usually complicate dreams \u2013 the couple agreed that painting the once turquoise and blue walls white was a challenge.<\/p>\n<p>\u201cIt took about four coats of us here super late at night, and getting up on the ladder, painting the beam four times too,\u201d Chase said as he motioned to the freshly painted black beam overhead.<\/p>\n<p>\u201cIt\u2019s been a lot of learning. We got into this without 100% knowing what we were getting ourselves into. It\u2019s been a challenge, but I think the key is to keep at it and not lose hope that things will get better,\u201d Rubio said.<\/p>\n<p>Rubio\u2019s mother Isela has been a major help, she said, and they\u2019re in the process of training her younger brother to take orders and do dishes. Though it\u2019s small, Rubio said it takes more than just her and Sam to make the place run.<\/p>\n<p>And their signature dish, you may be wondering?<\/p>\n<p>\u201cGreen chile for sure,\u201d said Rubio, without hesitation. \u201cIt\u2019s a family recipe, homemade from scratch.\u201d<\/p>\n<p>It\u2019s signature, especially in the breakfast burritos, she said.<\/p>\n<p>\u201cThe breakfast burritos have been a hit,\u201d said Rubio. \u201cI think that\u2019s how we\u2019ve made it through. It\u2019s been a week, but still.\u201d<\/p>\n<p>Aside from breakfast burritos, they offer bagel sandwiches<\/p>\n<p>Roosters is open every day from 7 a.m. to 4:30 p.m. Come spring, the hours will likely change and be extended, as they\u2019re planning to add dinner to the menu as well.<\/p>\n<p>\u201cCome try it,\u201d said Chase.<\/p>\n<p>\u201cYeah, come see us.
