To nutritionists, dandelions offer a veritable cornucopia of nutrients. And to many a homeowner, the relentless root systems destroy the lush greenness of an otherwise perfect lawn.<\/p>\n<p>Never has a single plant been so beloved and so reviled. Historians have discovered the dandelion was used as a medicine and food in ancient China, Egypt and Greece. It probably came to North America with the Pilgrims on the Mayflower, not as a stowaway, but for its nutritional value. It\u2019s really only since World War II that lawn mania has led to a concerted war on dandelions.<\/p>\n<p>And the name? It is derived from the French \u201cdent-de-lion\u201d or lion\u2019s tooth, for the shape of the leaves.<\/p>\n<p>Nutritional bonanza<\/p>\n<p>Katrina Blair, owner of Turtle Lake Refuge, comes down strongly on the nutritional side of the debate.<\/p>\n<p>\u201cDandelions are packed with nutrients,\u201d she said. \u201cIt\u2019s interesting, if all you had to eat were dandelions, if you ate the entire thing \u2013 roots, stems, flowers, leaves, seeds \u2013 you could survive on it because it\u2019s a complete protein.\u201d<\/p>\n<p>Blair has been consuming dandelions since before she could walk. They\u2019re a bit of acquired taste, she said, but they contain high levels of vitamins A and C, iron, magnesium and calcium.<\/p>\n<p>\u201cThe first time you eat a leaf, it might taste a little bitter,\u201d she said. \u201cThen you start craving it, and that bitterness, because our bodies know how powerful it is, how it\u2019s toning our organs. Bodies recognize it and say, \u2018Wow, I want that.\u2019\u201d<\/p>\n<p>Turtle Lake Refuge serves dandelions in all kinds of ways, from salads and pestos to the roots, which taste a bit like coffee.<\/p>\n<p>\u201cWe just roast it and dry it,\u201d Blair said. \u201cIt\u2019s so replenishing and rejuvenating for the liver. It provides a nice balance after a hard night.\u201d<\/p>\n<p>Carver Brewing Co. brews a dandelion beer, using dandelions provided by Turtle Lake Refuge, which it sells on tap. And dandelions wouldn\u2019t be a full-service food without dessert.<\/p>\n<p>\u201cOur dandelion ice cream is sold at Durango Natural Foods,\u201d Blair said. \u201cIt\u2019s like a lemon sorbet, with honey, lemon, water; we make it creamy by adding avocado and, of course, dandelions. We create all the recipes we use at Turtle Lake.\u201d<\/p>\n<p>Turtle Lake gets its dandelions from a variety of places, picking them in Brookside Park, harvesting them from the woods around the lake and collecting them from friends and supporters.<\/p>\n<p>\u201cOf course, you don\u2019t want them from any place where herbicides or chemical fertilizers are used because you don\u2019t want to put those things in your body,\u201d Blair said. \u201cWe also harvest a lot and dry them for winter because we use dandelions all year long as a winter green powder, combined with other plants, but mainly dandelions.\u201d<\/p>\n<p>Blair recommends using about a half teaspoon of the powder in water in a smoothie or juice.<\/p>\n<p>\u201cIt helps to get the wild minerals in your body,\u201d she said, \u201cand to stay connected to this land.\u201d<\/p>\n<p>If you don\u2019t want to consume dandelions, they also make a nice musical instrument, Blair said.<\/p>\n<p>\u201cI make flutes out of the stems,\u201d she said, \u201cand they sound like a kazoo. You need to find one with a really tall stem, kind of later in the season, and take off the flower. Then you can cut holes for your fingers.\u201d<\/p>\n<p>Blame the kids<\/p>\n<p>Since the early 1900s, when the Reading Club of Durango had a program on dealing with the \u201cnew yellow horde,\u201d Durangoans have battled the intruder in their lawns and gardens.<\/p>\n<p>Darrin Parmenter, horticulturist with the La Plata County Office of the Colorado State University Service, doesn\u2019t want to be the bad guy when it comes to dandelions, but he does have some tips for managing them in a lawn.<\/p>\n<p>\u201cWe would never consider dandelions an invasive or noxious weed,\u201d he said. \u201cThey\u2019re more a nuisance weed than anything else. That doesn\u2019t mean they\u2019re not a challenge for some people.\u201d<\/p>\n<p>One of the first challenges with dandelions is their early start, he said.<\/p>\n<p>\u201cThey go to flower and to seed relatively early,\u201d he said. \u201cRight now, they\u2019ve already gone to seed in some places because they\u2019re a really early winter annual. They\u2019re prolific seeders with the potential to be perennials or at least biannuals.\u201d<\/p>\n<p>The key is to get them before they go to seed, and not to cut them but dig up the taproot, Parmenter said.<\/p>\n<p>\u201cThe bigger ones are harder to get out, too,\u201d he said, \u201cbut getting as much of that plant out as possible is your goal. The root serves a purpose, it\u2019s a carbohydrate storage unit. If you leave some, the dandelion will come back, but when it comes back, the plant will be more stressed.\u201d<\/p>\n<p>The ultimate goal, he said, is to exhaust the carbohydrate storage capacity of the root.<\/p>\n<p>The good news is that, in general, grass or turf can outcompete dandelions.<\/p>\n<p>\u201cWeeds in general like disturbed or out-of-the-way places,\u201d Parmenter said. \u201cThat\u2019s why you\u2019ll see a dandelion in a sidewalk crack. They\u2019ve evolved to do that, but you won\u2019t see a flower or a bulb there because they haven\u2019t.\u201d<\/p>\n<p>In the end, the biggest challenge to lawn purists may not be the wind, but the children who love watching those seeds waft away after a good puff. According to the University of Wisconsin Weed Science Extension page, each flower generates between 54 and 172 seeds, with each plant generating up to 2,000 seeds.<\/p>\n<p>\u201cEven as a kid who blows them out, you kind of thought, \u2018That\u2019s a lot of seeds I just spread,\u2019\u201d Parmenter said with a laugh. \u201cChildren are definitely the ones at fault.\u201d<\/p>\n<p><a href=\"mailto:abutler@durangoherald.com\">abutler@durangoherald.com<\/a><\/p>\n<div class=\"naviga-scoreboard\">\n<h4 class=\"scoreboard-title\">If you go<\/h4>\n<p>The Dandelion Festival will be held from 1 to 9 p.m. Sunday at Rotary Park, behind Veterans of Foreign Wars Post No. 4031 at 1550 Main Ave. The event is free and will include music, maypole dancing, and local food and drinks with dandelions.<\/p>\n<\/div>\n<div class=\"naviga-scoreboard\">\n<h4 class=\"scoreboard-title\">Dandelion Pesto<\/h4>\n<p>Ingredients<br>\n                1 cup cashews, sunflower seeds or walnuts (soaked)<br>\n                3 cups chopped dandelion (taraxacum officinale) greens<br>\n                \u00bd cup olive oil<br>\n                1 cup garden herb like mint, basil or oregano<br>\n                3 cups microgreens<br>\n                3 cloves garlic<br>\n                2 lemons, juiced<br>\n                1 teaspoon salt<br>\n                1 cup divine (purified) water<br>\n                Method<br>\n                Combine all ingredients in a blender and mix until smooth.<br>\n                Serving suggestions<br>\n                Dandelion pesto is sensational over zucchini pasta. To prepare the pasta, use a hand-crank spiral slicer machine or a cheese shredder to magically make noodles from raw zucchini or other veggies (carrots, beets, pumpkins and yams make good pasta too). Pesto also can be used as a spread or a dip for almost anything. Get green and lively yourself!<br>\n                Nearly any fresh herb will make a tasty pesto. Try making an all-wild pesto using just greens you find while foraging. Use dandelion and wild mint or wild mustard greens and wild onion; explore the combinations. Wild greens are some of the most mineral-rich foods on the planet. Just think: Those greens wanted to grow exactly where they did.
